This recipe will delight you in its taste. It should be prepared in
a cool environment. This recipe is from the "Ukrainian Daughter’s Cookbook".
4 medium chicken breasts, split lengthwise and deboned
1 tablespoon chopped scallions
1-tablespoon parsley
¼ lb. stick butter, chilled
Flour
Salt
2 eggs, beaten
1-cup fine breadcrumbs
1). Place the deboned and skinned chicken breasts between two sheets of Saran Wrap and pound them flat with a wooden mallet till they are about ¼ inch thick.
2). Sprinkle each chicken breast with salt, scallions, and parsley.
3). Place a stick (1/8 of a ¼ lb. stick) of chilled butter on each cutlet.
4). Roll the chicken breast up like a jellyroll. Press ends to seal.
5). Dust each cutlet with flour, dip into beaten egg, and roll in fine breadcrumbs.
6). Chill in the fridge for 1 to 2 hours.
7). Fry in deep, hot fat at 340 F for about 5 minutes or until golden brown.
