Monte, assuming that you're in the US, you'd need a visa to get into Ukraine (about $100 depending on whether you do it yourself or have a travel agent do it for you); if the woman has a passport she can travel to Warsaw or Krakow by bus,train,etc; I understand that it's difficult and expensive for young Ukes to attempt to get visa's to most European countries, since most of them would never go back "home" once they get acquainted to more modern lifestyle and Ukraine certainly doesn't wish to export their citizens, but I digress.
If you can get yourself to Ukraine, that would be the easiest method, but the nice thing about Poland is that as a US citizen, you get your ticket and passport and you arrive without the need for a visa; just be careful of pickpockets and mafia-cabbies, as you might in most large cities.
If you do go to Ukraine, try to go in April or May when things are in bloom and beautiful (I traveled twice in Oct/Nov timeframes and the weather went from "summery" to snow within a week).
Besides, in Krakow or Warsaw, you can rent a car, if you like, whereas in Ukraine, well?
