There are very many different kings of private apartments and hotels in Crimea, so first of all let me know what part of Crimea are you interested most of all.
Yalta is crowded in July, the prices are pretty high (by Ukrainian standards). there are many private apartments for rent in Yalta, look at www.apartmentsincrimea.com
Sevastopol is cheaper a little bit. I always recommend to my guests stay not in
Yalta, but in a small town Simeiz which is 20 minutes from Yalta by a car. It's much more romantic and peaceful place with excellent landscape and sea view.
It's very easy to visit Yalta but it's also very good opportunity to escape noise of it. :-)

Another opportunity is Eastern Crimea: Sudak, Novi Svet or Koktebel. But it's
pretty far from many attractive places like the cave-towns, Ay-Petry mountain
etc.
