I have been to Ukraine many many times and I always look forward to the many delicious dishes.
Just think about this...while in Ukraine you'll be eating delicious food with no preservatives or chemicals.
Yes their food is rich because they love using butter and cream in many of their dishes but if you are so concerned about "fat" then all you have to do is be selective.
I have yet to gain any substantial weight while on my tours but when I come home I do.
I think we should be much more concerned about what's in the food we eat here.

: I'm interested to know what people think of Ukrainian cuisine. I think North Americans have been conditioned to fear fat in food. Slavic cooking is notoriously high in fat. Mmmm sour cream everywhere and lotsa fried food. How have you dealt with that when you travelled there? Did you avoid it or embrace it?
