My fiancee is about to join me. I gave her photocopies of everything except two letters which were originals. These were the letter from my employer, and a letter from the registrar where I have booked the wedding. I also printed out photos of us together, and her visiting my home area and those went in.
She had no problem at all at the embassy and was complimented on the data pack. The only question was "When do you want the visa to start from?"
So photocopies are acceptable but include everything that is possibly relevant.
And present it well - we put it in a folder in A4 pockets with a title, etc. The staff at the embassy will appreciate anything that makes their task easier.
By the way - they gave her the photos back!
