Consider Prague, Krakow and/or Turkey

Getting a visa to Austria will be the toughest. I don't know about Greece. You might also want to consider Prague, Krakow (there used to be a good overnight train between the two) and Turkey.

I hear there are some fabulous Black Sea resorts in Turkey that are very cheap. It's sort of like Cuba or Acapulco. Once you get there, you stay at the resort until it is time to return home. If you want a lot of time to just hang out with her in a romantic setting, such a destination might work for you.

If you want to see things, I'd do Budapest and Prague. If you want her to be able travel only by train (to save $), meet her in Krakow, travel by train to Budapest/Prague, and then return with her to Krakow. I would feel comfortable letting her take the train by herself the rest of the way. The other advantage of this plan is you don't need to get a visa to Ukraine and no visa is needed for you or her to Poland, Czech Republic and Hungary.
