I have both flown an taken the train many times between Kiev and Simferopol. I have only one not so comfortable trip in a military style train, noisy and uncomfortable but clean. Every other time it was fine. I took sv ( best class) and it does give you a more comfortable ride with nicer wagons ( cars ). I took Crimean air this summer and it too was good, and at only a couple of hours travel it was great. Of course travel anywhere require you to be careful. Like most places in the world there are thieves. Double lock you door or use the latch inside you cabin.
Yalta is fun, my friend is a lawyer for hotel Yalta and this time of year the rates are great. Crimean air really took care of me by putting me up at Hotel Boryspl ( for free ) overnight because of a really nasty thunderstorm. By the way the hotel is walking distance to Boryspl airport and it really Great. Anyway enjoy your trip either way.
