Dear Sir,

There are two types of the situations which look close enough to your description:
1) You have more than 1000$ left. In this case all you have to do is show them a customs declaration which you filled out when you came in, and it should have the EXACT amount of money that you have with you on the way in.
Then in the outgoing declaration you just put like everything that you have left on you, and be done with it. Should be no problem, just make sure that you don't put any Hryvnas in there, and try not to have them with you on the way out, because foreigners (for some reason) are not allowed to take out any Hryvnas.

2) When you have less than 1000$ left on you. It should be OK. Becuase usually you would even go through green channel if you don't have any cameras or anything like this, and you have less than 1000$ in cash.

In both cases, the most important thing is to put the actual amount of money that you have with you on the way in and on the way out of the country. People that I worked with never had problems when they followed this basic rule.
