Ahhhhh.... the best borsch is made on an open flame(burning wood). Beets, cabbage and beef are essential.
Note that there are many varieties of borsch. Ukrianian boasts the biggest variety of optional vegetables : pepperoni, tomatoes etc...
It has unique flavour and outstanding aroma.
"There is no borsch in restaurant menu somewhere in central Russia." - not true. You'll find borsch everywhere with Russian population and “schi” also. And I do belive that Ukrainians do make very good schi out of fresh cabbage.
