I've been living in Ukraine for 2 solid years and never have been the victim of any real monkey business. We did get charged a 50% tariff on our wedding rings when my parents sent them to us from the states. But the law is clear about that - the value of the rings was more than 200 Euro - even if they were family heirlooms and didn't have a real dollar value.
I noticed that the two things you are not allowed to bring into Ukraine without declaring them are 1) cash over a certain amount and 2) jewelry over a certain amount.
I think you'll have a good trip 'home'. Don't worry too much, and maybe go through Kiev is Odessa was so bad.
