I'm not an immigration lawyer, and Tatiana Durbak should be able to help you better, but I think that you should be able to file I-765 based just on your K-3 status, without waiting for filing of I-485 package. Instructions to form I-765 have this provision, so I'm very surprised that immigration officers did not tell you this.

Not sure whether you can file I-485 right away, but my friend also on a K-3 visa had to wait until I-130 was approved... However it took less than 2 months for her (in Vermont) and at that time K-3 was very new so nobody really knew what is correct thing to do...
