You should speak with an immigration lawyer. What you should or can do depends on your status and that of your girlfriend. Under most circumstances, people have to return to their home countries for 2 years if they are on a J-1 visa that has a home-stay requirement.
You can write to me, and I can answer some of your questions. More complicated questions may require a consultation.
You can also go to the web site ilw.com. It is run by competent immigration attorneys. Many times questions are answered free of charge.

: I have been with my girlfriend for over a year and a half and we discussed marriage but are unsure of what to expect or how to approach it.

: Can anyone tell me what to expect? I am under the impression a Ukrainian student on an f-1 Visa has to return home for a minimum of 2 years after their Visa expires before they can return to the US. What if a US citizen who can provide financial support were to marry them in the US before their student Visa expired? Would they still have to leave? What is the process? Is there any way to avoid any seperation during this process? Please all, give me some advice! I have done research but am still very confused. The only thing I do know is I will die without her.
