you don't have to die. Having F-1 visa you don't have to stay in your contry for 2 years upon completion of your studies. Maybe she has J-1 which is totally different. Anyhow, if her F-1 expiring soon, it is not a problem as long as she remains student at program(college, university, english courses) that would give her an I-20 document
-you can transfer to another school
-filing an extension form with INS check thier site for the form you need to file it gives you additional 6 month here in the US(but I don't recomend it cause it takes them a year to reply).
I suggest that your girlfriend starts studing at progrm that would give her an I-20 so that she can stay here as long as she is enrolled in that program.
